    Abstract: 近年來,飲食產業的麥當勞化似乎以成為一股不可抵擋的趨勢,速食的流行,是全球化過程中,一個普遍存在的社會文化現象。過去,學者針對速食的流行,或是麥當勞的崛起,探討的角度大多聚焦於這種速食飲食文化的普及化,是否會瓦解各個社會本土飲食的原貌?進而創造出一種同質性更高的飲食全球化現象?這種消費與勞動力的麥當勞化,是否重塑了本地的文化經緯及主體,生產了日趨理性化、功能化、非人化的社會生活?本研究試圖從另一個研究取向,來看待在全球化潮流下,麥當勞化的飲食產業對台灣飲食文化的影響為何?研究者從實證觀察的角度,分析台灣地區飲食文化受到資本主義思想的影響,不斷朝向麥當勞化的標準化發展模式發展,對於本土的飲食文化,產生何種衝擊?本研究以台灣地區連鎖性之餐飲業為例,進行實證之觀察與剖析。為了呈現台灣連鎖性餐飲業的變化趨勢,本文在考量料理類型與企業資金來源等因素下,分別就其料理類型為地方性的(local)或異國的(foreign)料理,以及資本類型為本土的(domestic)或跨國性的(international)資金,進行企業類型區分。本研究以鬍鬚張和鼎泰豐為本土地方餐飲業觀察研究標的,以王品集團和85度C為本土異國餐飲業者觀察研究標的,以麥當勞和星巴克為跨國異國餐飲業者觀察研究標的。本研究試圖從另一個研究取向,來看待在全球化潮流下,麥當勞化的飲食產業對台灣飲食文化的影響為何?研究者從實證觀察的角度,分析台灣地區飲食文化受到資本主義思想的影響,不斷朝向麥當勞化的標準化發展模式發展,對於本土的飲食文化,產生何種衝擊?本研究以台灣地區連鎖性之餐飲業為例,進行實證之觀察與剖析。為了呈現台灣連鎖性餐飲業的變化趨勢,本文在考量料理類型與企業資金來源等因素下,分別就其料理類型為地方性的(local)或異國的(foreign)料理,以及資本類型為本土的(domestic)或跨國性的( international)資金,進行企業類型區分。本研究以鬍鬚張和鼎泰豐為本土地方餐飲業觀察研究標的,以王品集團和85度C為本土異國餐飲業者觀察研究標的,以麥當勞和星巴克為跨國異國餐飲業者觀察研究標的。
    In recent years, the McDonaldization of the diet industry seems to become a share of trends that can`t be withstood; the widespread of fast food under the influence of globalization is a ubiquitous social phenomenon. In the past, researchers investigated the prevalence of fast food or the emergence of McDonaldization from the perspective that the popularization of fast food culture will disintegrate the original diet culture of each country, and then create dietary homogeneity as a globalization phenomenon. Did the McDonaldization of consumption reinvent local culture and made it more rationalized?This research attempts to study the trend of McDonaldization from a different perspective. What kind of impact will McDonaldization create on restaurant culture in Taiwan?Based on empirical observations, this paper analyzed the food industry in Taiwan. Using chain catering trade in Taiwan as an example, the researcher carried on observations and analyzed the development of the McDonaldization in food Industry.In order to investigate the changing tendency of the chain catering trade in Taiwan, this research takes into account the factors such as: types of enterprise`s capital (local or foreign) and styles of food, etc. Several famous chain catering stores in Taiwan were investigated in this research.
