    Abstract: Traditional livestock farming is seriously impacting the environment. The water has been polluted, the soil has been damaged, the forest has been cut down which all together ring an alarm for sustainable food sources. Understanding the issue and the importance of rapidly finding a solution, in a report written and published by the Food and Agriculture Organization (FAO) in 2013, the United Nations (UN) called for using insects as an alternative protein source (FAO, 2013) (BBC News, 2013). Almost 10 years since the UN’s call for action, there have been some dramatic achievements in the applications and consumption of insects and related products. However, insects and related products have not been widely accepted. Some reasons have been named such as the disgusting feeling of putting insects in the mouth, the diversity of products, and the production process.
    In Southeast Asia, Thailand and Cambodia are famous for their cricket consumption as street food. In Vietnam, insect farming started in 2003 with some farmers realizing the potential of this type of product when it was traded on the border with Cambodia. Yet the industry is still immature. Criki was born to touch all steps in the supply chain to not only bring insects to the Vietnamese table but also bring benefit to farmers participating in the industry by executing three main values: standardize the farming process, build a community to guarantee for the final product and diversify cricket products to make it attractive to customers.
